This morning the girls stayed at #nonnieandpappaws with Pappaw while Mom & I hit the gym. My #workout was 3.15 miles in about 43 minutes on the #treadmill (which pushes me to work harder) & 9 minutes for the Abs & Squats Challenges WITH weights. Meal prep recipe; Thai Black Rice Salad with Wild Salmon: Serves: 4 INGREDIENTS: 1 cup Black Forbidden rice Pinch sea salt, plus additional to taste 1/4 cup natural rice vinegar 1 tbsp olive oil Juice 2 limes 3 tbsp low-sodium soy sauce 2 tbsp raw honey 2 tsp sesame oil 2 tsp Sriracha hot chile sauce, optional 8 oz boneless, skinless wild salmon, cut into 2-oz fillets 1 mango, peeled, pitted and diced 1 red bell pepper, diced 1/3 cup roughly chopped fresh cilantro 1/3 cup roughly chopped fresh mint, plus whole leaves for garnish 4 green onions, thinly sliced Fresh ground black pepper, to taste Olive oil cooking spray 4 tbsp raw unsalted slivered almonds or chopped peanuts In a medium pot, combine rice, 2 cups cold water and pinch salt; bring to a boil. Reduce heat to low, cover and simmer until tender, 25 to 30 minutes. Remove from heat and invert rice onto a large baking sheet, using a fork to spread out on sheet. Set aside. Meanwhile, prepare dressing: In a small bowl, whisk vinegar, olive oil, lime juice, soy sauce, honey, sesame oil and, if desired, Sriracha sauce. In a large resealable bag, add salmon and 1/3 cup dressing. Seal and gently turn bag to coat; refrigerate for 30 minutes. In a large bowl, combine mango, bell pepper, cilantro, mint and onions. Add rice and remaining dressing. Toss to coat and season with salt and black pepper. Cover and refrigerate until needed. Heat a large nonstick skillet on medium-high and coat with cooking spray. Remove salmon from bag, discarding marinade. Add salmon to skillet and cook, turning once, until flesh flakes easily when tested with a fork, about 4 minutes. Remove from pan, transfer to a plate and set aside until completely cooled. Spoon mango-rice mixture into serving bowls and top with salmon and almonds, dividing evenly. Meal prep recipe; Mediterranean Calzone: Serves: 4 INGREDIENTS: 8 oz skinless, boneless chicken breast 3 cups baby spinach 2 cloves garlic, diced 1/4 cup whole-wheat flour 1 16-oz pkg whole-wheat pizza dough 1/2 cup low-fat ricotta cheese 1/2 cup onion, chopped 4 artichoke hearts, chopped 1/4 cup roasted red peppers, rinsed and chopped 1 small Roma tomato, seeded, cored and diced 1/2 cup reduced-fat feta cheese 2 tsp olive oil Preheat oven to 375 F. Bake chicken breast for 15 to 20 minutes, until fully cooked. Meanwhile, steam spinach, garlic and 1 tsp water in a bowl for 2 minutes on high in microwave. When cool, drain excess liquid. Cover a flat surface and rolling pin with flour. Divide pizza dough into 4 sections by cutting with a knife. Roll out each section into a circle. Place each section on a baking sheet. Mix ricotta cheese and onion together with spinach-garlic mixture. To assemble each calzone: Layer 1/4 of ricotta mixture, 1 artichoke heart, 1 tbsp red pepper and 2 oz chicken breast on 1 half of each dough section. Next sprinkle 1 tbsp tomato and 3 tbsp feta. Be sure to leave 1/4 inch around perimeter of dough. Fold in half to make a half-moon shape, pinch sides together with water to stick. Brush exterior of dough, on both sides, with oil, gently flipping over calzone to avoid contents ripping through. Bake for 20 to 25 minutes, until dough is golden and feels crusty to the touch. Place halibut in a large bowl. In a small bowl, mix together orange and lime zests, lime juice, salt and pepper. Pour marinade over halibut and set aside. In a large sauté pan, heat oil on medium. Add onion, cumin, oregano, salt, pepper and garlic. Cook for 3 minutes, until spices release their aroma and onion begins to soften. If onion starts becoming too brown, add 1/4 cup water. In batches, add spinach and cook, covered, for 3 to 4 minutes, until slightly wilted. Add quinoa and 2 cups water. Increase heat and bring mixture to a boil, then reduce heat to a simmer. Cook, covered, for 10 minutes. Add beans and cook for 5 more minutes. Then gently mix in orange sections and juice, orange zest and cilantro. Heat through for 1 more minute. Meanwhile, place halibut and marinade on a baking sheet and broil in oven for about 8 minutes. Serve halibut over quinoa mixture. Dinner & a bit of meal prep. Meal prepping is probably by far, the best way to stay on track. I'm not even joking people. First off you don't just grab the quickest thing you can find when you are really hungry, you don't have to spend hours cooking, and you don't have to take your time wondering, is this healthy?
