mini84 : Where did you get the recipe from? This I must try!

thybam : The pasta was adapted from a recipe my niece had me try but when I cook, I typically add extra or more of certain ingredients to my tastes pref:

thybam : Pasta: boil pasta (I used wheat pasta, which I do not prefer) slight al dente and set aside. -prep work- chop veges of choice plus tomatoes (to balance out the dense flavors), one onion, 2 cloves garlic, one green onion. Peel/devein 1 lb shrimp and cube 1 chicken breast. Season chicken breast as desired (I used herbes, cayenne, salt, pepper). Heat evoo (or butter) and sauté onions, garlic, green onions. Add bell peppers. After that stuff start smelling real good, add a little water, cover with kid, stir occasionally. Sauté the meats and add into bell pepper bowl. Mix well. Add more evoo into it. I made my own ghetto-quick "Alfredo sauce" but you can use half a jar of store bought if you'd like. Pref to taste: garlic powder, onion powder, cayenne, fresh parsley or basil, the tomatoes, a little Tony's and salt (I ran out of Tony's so I added salt but use very sparingly), jalapeños. Mix mix and done. It reads like a lot more work than it really is.

thybam : Salad: note - I love this salad. It's made of everything I love and the tanginess compliments the pasta really well. Season a few strips of chicken. Sauté chicken and sliced onions. Set aside. Dressing: I poured about a glass of red wine (aim for a lighter fragrant wine, where the taste doesn't linger - virtually red water), I heat it on high in the same pan until it reduced to about 1/3. I let that sucker cool for a thirty seconds and squeeze in one lemon, a squirt of honey, salt, pepper, and evoo - stir. Mix and set aside into chicken mix. Back in pan, melt butter and brown minced garlic, QUICKLY sauté spinach + tomatoes + jalapeños + chicken and sauce mix (you want to wilt the spinach a little) and quickly plate it. I topped it with strawberries but forgot the boiled egg - still good & Done. Very easy salad and very yum.
